As a biologist this isn’t true. Gender is completely socially constructed, but sex is not. What IS socially constructed is the idea that you fall strictly into “male” and “female” but sexes are rooted in biology and objective reality.

Gender likely has biological underpinnings as there are brain regions associated with gender identity. Which is likely part of the reason gender dysphoria exists - there's incongruence between physical sex and gender identity.

Sex is still primarily socially constructed, it’s just constructed along more clearly biological lines. Determine what “counts” one way or the other is still all made up as a useful rule of thumb though, it is quite literally a social construct.

Sex as a category at all is socially constructed, which is not what OP was saying. I think OP is on the right track, the principle just goes further than they are acknowledging.

Sex as a category being socially constructed is exactly what I’m saying. That’s why I said “strictly” because it isn’t strict and the categories are bullshit.
