I’m confused. I understand the Israeli/Palestinian conflict has been a thing since before our parents were alive but in the most recent era of it (2023-) wasn’t it started by Israel being attacked?

No. Israel had murdered several hundred Palestinians in the year prior to Oct 7th. They prefer to act as though history started on Oct 7th but it obviously didn’t.
