My theory on the reason why AI enhanced games look uncannily like Kirk is because he was memed so much with such variation the AI that was trained on faces ended up using him as the baseline face

It actually is because of this! The internet being flooded with his face on a very large variety of bodies inflated the probability that an image generator would predict his facial features on almost every body type by a non-trivial amount. My university lab actually measured this happening

A lot of the clips people share of DLSS 5 enhanced graphics have faces very vaguely reminiscent of Kirk, lemme see if I can find some posts about it

Scout’s honor brother. It’s mostly a subtle shift, where his features aren’t being predicted exactly, but normal feature prediction has drifted in a statistically significant way towards the characteristics of his features (length, thickness, location, etc). It’s most prevalent in cheaper models, the big ones didn’t show a meaningful difference
