I always repeat what the person says but with the correct pronouns, it just feels like the least confrontational way to correct someone. For example, if they say “she doesn’t like XYZ” just say, without sounding accusatory or rude “you’re right, he doesn’t like XYZ”

I ignore them until they correct themselves.
