If they knew how the show was gonna end since then, why was volume 2 finalized a week before it was released?

Well because obviously they have changed smaller details in the story. Even season 5 had loads of adjustments they work as they go. But they knew th premise for how they wanted the show to end and that’s why they started laying the groundwork in szn 2
