2. Meg, Lois, and Chris have become too unlikable/one-note to hold up 3. Maybe they could’ve done some phineas and ferb and Perry the platapus shit where The guys get the main plot and Brian and Stewie get the B plot.

Yeah that’s literally the problem. Centering the show around the family is what the Simpsons did. At least with Bobs Burgers the character dynamics and stories are different.
