for my quad days i only do bulgarian split squats, leg extension, and elevated goblet squats. should i be doing more/different exercises?

Your quads don't know what exercises you're doing. They just need a reasonable number of sets of stimulus. A squatting pattern and leg extension is all you need

I think split squats and leg extensions are great but the goblet squat probably don’t do anything but build fatigue

Goblet squats are not very good. Leg extension and bulgarians is plenty

I’ve been doing nothing but 3 working sets of leg extensions for the past 3 years and it’s been plenty

Goblet squats are a great squat accessory to get comfortable below parallel

Accessory work is entirely different than actual working sets designed to build muscle.
