Heavy weight low reps three times a week. Light weight lots of reps twice a week. Also vary your exercises.

And no you shouldn't vary your exercises; you should have one for each muscle you want to hit and you should stick with it, generally.

Some exercises only target specific parts of a muscle which is why variations of exercises exist.

Gotcha, already covered, I have 2 variations where needed to hit each head of a particular muscle group
