
Another chicken recipe! Roast an onion with olive oil in a pan. Scooch to the side, cook a pound of ground chicken until no longer pink. Add herbs (I add basil and oregano, sometimes some rosemary too) and mix the chicken and onions together. Throw in some low-sodium tomato sauce and 1-2 zucchinis, either shredded or cut into small chunks. Serve over rice (my fave, rice soaks up the sauce great) or noodles if you want spaghetti! Add some parsley to your finished plate. Yummm
I love working with ground chicken, it’s so convenient and quick to cook. Cut up an onion and throw it in a pan with a bit of olive oil. Scooch that to the side of the pan and add a pound of ground chicken. Cook it until there’s no more pink. Add seasonings (will add my go-tos) and mix in a bag of microwave corn. Serve on top of rice or eat with chips. (Protein chips for extra protein!!) It meal preps really well!
