
Get a celiac blood test before you go gluten-free otherwise you may have so much trouble reintroducing it that you can’t get a conclusive test. Avoiding wheat is easy because it’s a major allergen and will be listed on packaging. Barley and rye also have gluten and are harder to avoid because they can be hidden in ingredients like malt. There are gluten free versions of most foods and many are actually good. I’ve found good Mac n cheese, pizza, chicken nuggets, pretzels, oatmeal, cookies, etc
Big agree with number 1 about getting tested before you cut out gluten. Thise results are only for celiac, and you may do better without gluten even if you don't have celiac. I like going for food genres that don't use a lot of gluten to begin with. Mexican food's biggest obstacle is the occasional flour tortilla which can be subbed for corn tortillas easily. Vegetable-only sushi w/o soy sauce is easy. Halal food w/ only non-fried meat and veggies is easy. Indian food is easy to find gluten free
