It kinda makes me sad that my complicated relationship with food directly stems from my mom and I know she’ll never take responsibility for it either

The best advice I can give you (it may sound harsh): It’s not her responsibility. She was the origin/cause/instigator, but as an adult it is now YOUR responsibility because it’s YOUR life & health. The good news is that you are strong, intelligent, and more than capable of getting it in check. Maybe it won’t be fixed overnight, but you CAN and WILL fix it because it’s your responsibility to. Ignore her and take her out if the equation. Her acknowledging it won’t fix it, but you CAN fix it!
