my boyfriend is wanting to go to therapy (i want him to as well) and he spoke with his mother about it but they didn’t agree. i really don’t like that she told him no to a therapist that would be covered under their insurance. big red flag to me

That definitely is a stereotype among many Hispanic parents. It’s just a cultural norm/stigma thing. A common phrase you’d hear in a Hispanic household is “dirty laundry is washed at home” meaning if you’re struggling with something it’s best fixed at home with family. Also it’s highly likely religion has a big play, they think god will fix everything and going to a therapist is against god
