Ohh. Lettuce is super easy to grow even in an apt, i have hella homegrown lettuce

Ah ic, my cat loves to eat my lettuce so i do it on my balcony lol. Foraging leafy greens is a great idea, i find dandelion greens and sorrel to be a good analogue to arugula
