I wanna try fallout cause the whole aesthetic seems so like something I'd love and from what I've seen it looks a lot like bioshock which was fantastic. But I have no idea if there's a specific one I have to start or if they have different play styles

The first two games are very different, they're 90s style isometric RPGs. I think they're amazing but they're probably not at all what you're used to. Fallout 3 changed it up to a shooter with RPG elements, and New Vegas and 4 kept that general vibe. 3 and New Vegas show their age but NV has the best story and writing. 4 is probably the most approachable since it's the newest and the gameplay is the most polished, but imo it has the worst writing by far.

highly reccomend starting with fallout 4. i think ppl mostly agree new vegas is the best fallout game but fo4 is more accessible imo bc it's newer and plays smoother.

^^^ this heavily. I started playing Fallout 4 on the Xbox, eventually moved onto PC and got New Vegas, new Vegas had its issues on pc and never got to finish it cuz of the issues.
