I understand "if it ain't broke don't fix it" as a general rule, and it does make sense. However, the 1998 release of Ocarina of time was not the full product that nintendo had envisioned. Content was cut due to hardware limitations, which is not a problem with the switch 2. Making the exact same incomplete game just doesn't make sense to me.

No, because same 😭 I want just a bit more here and there. I know I’ll be happy with just the new coat of paint, because I replay the game without it all the time, but I would still like new things to find sprinkled in the world I already know.
