
i did slightly rush its cooking, so i set my oven to 350. preheat it for 10 extra minutes, put the filet in and then turned it down to 250 — then 225 around 100°, 200 around 115°, and took it out at 125°. it set for about 8 minutes while the pan heated up, and i gave it a nice reverse sear (my first time searing!!)
