
Tbh I kinda freeballed it a bit. I made mashed potatoes by ricing and mashing boiled potato cubes then added a bunch of milk, flour, and heavy cream until it felt about right. added a shitload of shredded cheese and some salt and pepper. covered my cutting board in flour, scooped out ~2 tbsp of potato batter at a time, rolled them around in the flour, shook then off, then dropped them in the pan. i used a rubber spatula to flatten them out, but i didn't press down flat, i used ->
the flat side of the rubber spatula to sort of distribute the batter. cooked over medium heat till crispy, flipped a few times, and salted after removing from the pan. they lose their crispiness the next day (it would keep better if i actually battered the outside but i'm to lazy), but then they're kinda just mashed potato single serves and go great with gravy
