I like making stir fried rice in a big pan with chicken or tofu and whatever veggies I have (peas, edamame, broccoli, carrots, etc). Cook it in a good teriyaki sauce and it’s great

Eggs can be added to just about any savory dish for/in place of protein, and are usually not evil pricey

Try to pack your food with a lot of protein, so you’re not getting hungry as quickly. Look up some staple easy recipes when you don’t have time to cook so you always have something on hand. But just fine like a good list of recipes that you like and then rotate them throughout the month.
