I used 4lbs pork neck bones (couldn’t find femur) and 1.5lbs chicken feet (couldn’t find uncured pork hocks) and then I added 1 whole onion cut in half, 1 head of garlic cut in half, 5 long slices of ginger, 4 scallions. And that’s about it. You also have to add dashi to the broth. I did a cold brew of instant dashi powder (didn’t wanna buy dried anchovies), kombu, and 2 dried shiitake mushrooms

And then when you assemble the bowl to serve you have to add tare and aroma oil or lard. I did a simple shoyu tare and just saved the lard from when I braised the chashu pork
