It’s bc men were in charge of narratives when lust was first humanized as a concept WAYY back when, and men see women as sex objects a lot of the time (more or less). After that it just kinda stuck. That being said there are male depictions of lust like incubus

It depends how the sin is being depicted, some depicted a person who is suffering with that sin and others is someone who kinda use sin. If it suffering it would be a gooned out guy, if it’s a power it would be a woman that uses her beauty to her advantage yk. It’s weird how authors write but interesting but ur right I would like to see other depictions cause for the most part it’s the same in alot of media.
