That’s literally it. They pay attention to seasoning, texture, flavor pairings, spice so the food can stand on its own and not be some weird wannabe bacon that tastes like a loaf

Well yeah lol. The point is other places aren’t selling Indian food as their vegan options and that’s not the kind of food vegans are usually describing
