A conference with Texas A&M, Texas Tech, TCU, SMU, University of Houston, Baylor, UNT, Rice, and texas would be cinema. Play everybody once for eight total conference games without ever leaving the state and the conference would still be one of the top five most competitive. If you're feeling spicy you could throw in Arkansas, Sam Houston, and LSU too, but I like the idea or a 9-team or 10-team conference.
