It’s more than likely just seed crystals forming rather than your pot type you can add an invert sugar like corn syrup or glucose to prevent the crystallization or add an acid to the sugar. Also it begins from the sugar in the sides of your pit so brush the sugar on the sides of the pot with water to dissolve them again and it shouldn’t crystallize anymore
