if you spell a word wrong too many times your phone thinks its an intentional misspelling and eventually starts putting it in its own vocabulary as well

Settings > General > Keyboard > Auto-correction. I leave spellcheck on so if it's actually a tricky word it's just two taps to fix it but it never does it without me explicitly saying to change something
