Anyway I would break up with him because why would you do something life changing to your physical appearance especially when it wasn't asked of you? We're dating so it must mean I saw past the height, so why continue to change yourself?

I would not like it. Over the course of a relationship, my preferences change to match almost every physical attribute of my partner. I would not want any unnecessary changes. But it is also his body, his right to do with it what he wants, and I respect that. I would get used to it
