So I told this guy good luck when he said he’s reading paperwork and then he went off saying that I was calling him delusional. Am I missing something?

It sounds like he thought you were being sarcastic / condescending when you said it, and repaid the perceived disrespect in kind

I feel like it was an overreaction. I explained that I meant good luck with handling a tedious task not that he was illiterate but he went from 0 to 100 unnecessarily
