How Sandman provided the emerald is pretty important in my opinion (even though the adaptation wishes to keep overt references to stands hidden though they could’ve worked around it) and they changed that alongside the explanation for how he can run like that, the intro with Steven Steel where he’s placed in a morally questionable light (that also introduces his strange circumstances with Lucy), Johnny’s suicidal tendencies, the glacial ice encasing the trophy, any direct references to slavery

… and small but, to me, character building moments like Gyro’s thought process behind keeping his bear and the quote about talking to his ass. There’s also like Pocoloco getting covered in shit only for it to be fortuitous to him (with some bazangas to boot) but I guess that didn’t really need to be in there

I forgot Steven explaining how sandman runs that would’ve been nice. After how they adapted the rest of jojo I’m not surprised at all there’s no slavery. The rest I think is fine to leave out for now, there’s definitely room for it to be included later
